Founded in 1993 by Bernard Lussaut, our small business near Bordeaux is a family-run organization. Over the years, we have developed our production facilities in response to strong consumer demand, while maintaining our traditional know-how and quality standards.
With quality at the heart of our values, innovative manufacturing processes has preserved the quality of our products, which contain no preservatives, additives, colorants or GMOs.
If the Canelé has gone from being a confidential pastry to one of the symbols of Bordeaux Gourmand, it's thanks to Bernard Lussaut and his teams, who have devoted their energy to democratizing the Canelé in France and abroad.

The main stages of Aquitaine Spécialités
1993
Creation of Aquitaine Spécialités, Canelé production was artisanal at the time.
2001
Beginning of industrial phase with first customers in supermarkets. It was also the beginning of frozen Canelés production.
2005
We are ISO 9001 certified.
2008
We are ISO 22000 certified.
2009
We acquire New Ecocert for our organic Canelé.
2010
Launching of honey recipe.
2011
Sales team deployed in France and beginning of exports abroad.
2012
Modernisation and expansion of production, we move to a new production site, commitment to CSR approach.
2014
We acquire IFS and BRC certifications.
2016
Development of a Clean Label recipe to adapt to customer requests in terms of ingredients, labelling and quality charter.
2017
Major investment in Research and Development to make use of innovations for all distribution networks.
2019
Launching of chocolate and vanilla recipes. Many projects are under way to meet our customers' requirements.
